Simón was born on June 11, 1997, in Vitoria-Gasteiz, Spain, and grew up in the nearby village of Murgia in the province of Álava. He is Spanish and has deep roots in the Basque Country.

His father, Daniel Simón, is originally from the Province of Zamora and served in Spain's Civil Guard. His mother worked as an officer in the Ertzaintza, the Basque regional police force. Simón has credited his parents' demanding careers in law enforcement with helping instill discipline, responsibility, and a strong work ethic from an early age.
Unlike many modern soccer stars, Simón has largely stayed away from the spotlight. He rarely gives interviews about his personal life, avoids the celebrity lifestyle, and has chosen not to maintain active public social media accounts, preferring to keep the focus on his performances on the field.
